Casley Mount Hutton 2005 Reserve Cabernet Sauvignon

2005 was a very good local vintage, it was only about 4 years ago that Peter Stark told me he was still waiting for the tannins in his 2005 Nebbiolo to calm down enough so he could drink it. Cassis, a little tobacco box, blackberries and just a hint of spice predominate on the bouquet. The wine, sealed under Diam and aged in French Oak does need a long breathe, there is also some fine sediment so a decant is recommended.

In the world of Cabernet Sauvignon this could never be described as a big wine instead it is more subtle in its medium bodied presentation. The overall balance is impeccable and the wine has a lot of interest but as is the case with more subtle wines you have to give them time to be able to speak to you. The palate is smooth with a gentle caressing mouthfeel but drying tannins late in the experience remind you that you are engaging with cabernet sauvignon. There is still quite a spine of acid that suggests the wine will live a little longer. Cassis and dark plums with a little sweetness are evident, these flavours dance around some liquorice but that entire dance is coated with dark chocolate, then a little granitic mineral character says hello and immediately acquiesces it’s influence to a rising spine of acid and then the cabernet tannins take command with their unmistakable desiccating influence.

The wine has good length but it isn’t huge. I would have liked to have tasted it as a youngster to compare with now. It will remain drinkable for a few more years but no further development will occur. If you have some I suggest opening one now to see how your’s are travelling.
